Currently, we are setting payment plans at the Outfitter level. We would like to support the ability to create an override at the listing level.

Just posting Joel's feedback/comment to keep the paper trail:

My personal take is that I think it makes the most sense to be at the listing level. I wonder if it could work in a way like add ons where it could be applied to all listings or selected to apply to certain ones.

Some of our outfitters offer various hunting and fishing packages with different booking cycles.

Examples -

one of our outfitters offers trips in the US as well as Canada. In this case, the booking cycles are very different
Corey w/ Land Of Enchantment might want a different deposit schedule for his mule deer hunts vs his elk hunts
one of our outfitters might also offer fishing trips. many fishing trips are booked within 2 weeks of a trip bc it is highly dependent on the weather.
